Turkey Taco Tuesday

Well really it turned out to be Turkey Taco Wednesday, and with all we have left over it might be Taco Thursday. Honestly, it is very hard to cook for only 2 people. Most recipes are set up for 4-6 servings, and I have an issue with knowing appropriate serving sizes. I always get scared we are not going to have enough and end up with enough for the whole block. Thank God my Hubby can pack it way, but somehow always seems to not pack it on. Oh how I wish I was a boy…

Anyway the Tacos turned out good. There are a couple of things I will alter next time in terms of seasoning, cook time and of course serving sizes. Other than that, the spread looked impressive! Even I was sort of impressed. We had ground turkey tacos, garnished with shredded lettuce, tomatoes, cheese, onions and sour cream. On the side we had Mexican rice and refried beans. Like I said, enough for the whole block.


  • 2 teaspoons chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon oregano
  • 6 ounces extra-lean ground turkey (if you use more meat be sure to up your seasoning accordingly)
  • ½ cup chopped onion
  • Preferred Tortillas
  • ¼ cup shredded sharp cheddar cheese
  • 2 cups shredded lettuce
  • 2 medium tomatoes, diced
  • ½ cup salsa


  1. In a small bowl, stir together the chili powder, cumin and oregano.
  2. In a nonstick frying pan, add the ground turkey and onion. Cook over medium heat until the turkey is browned and onion is translucent. Drain well. Add the spices to the turkey mixture. Stir to mix evenly.
  3. To serve, place a ¼ cup of the turkey mixture in each tortilla. Top each with 1 tablespoon cheese, ¼ of the diced tomatoes, ½ cup shredded lettuce and 2 tablespoons salsa. Fold in both sides of each tortilla up over the filling, and then roll to close. Serve immediately.
